Date Nut Energy Balls
Simple (and ya, overdone), but perfect.
Servings: ~25
INGREDIENTS:
10 pitted medjool dates
1/2 cup raw organic almonds
1/4 cup raw organic cashews
1/4 cup raw organic walnuts
1/4 cup unrefined coconut oil
pink salt
unsweetened finely shredded coconut, for rolling
STEPS:
Add all the ingredients minus the shredded coconut into a food processor. pulse until mixture resembles a course paste.
Pour the shredded coconut onto a plate or flat surface and spread evenly.
Scoop out the mixture with your hands and form small, 1 to 1.5” balls. Roll in the shredded coconut to coat.
Store and chill in the refrigerator. Enjoy!
