These delicacies are grain-free, dairy-free and refined sugar-free, aka #paleo. You wouldn’t know, however. They taste exactly like the real thing: Nabisco’s famous Nutter Butter Peanut Butter Sandwich Cookies. There is something je ne sais quoi about a really expertly-made peanut butter cookie… it exudes sweet, salty, buttery, umami-rich secrets.



These healthyish nutter butters are a juicy secret. Share the tea with friends, or not.
To accommodate peanut allergies, any other nut butter can be used.

Sheet pan, unbleached parchment paper (or Silpat/silicone baking mat), mixing bowl, fork.
Makes ~10-12 small sandwich cookies (double/triple the batch for more!).
INGREDIENTS:
COOKIES:
1/2 cup organic unsweetened creamy peanut butter—or other nut butter. fyi, organic is important for peanuts. only ingredients should be peanuts and salt.
1/4 cup maple syrup
1 tsp vanilla extract
2/3 cup almond flour—fine and blanched is best. I like Bob’s Red Mill
1/2 tsp baking powder
FILLING:
1/4 cup organic unsweetened creamy peanut butter
1-2 T maple syrup
OTHER:
Cold glass of milk
STEPS:
Preheat oven to 350 degrees.
Make cookie dough. In a medium bowl, combine the peanut butter, maple syrup, and vanilla. Then, mix in almond flour and baking powder. If your peanut butter is unsalted, add 1/4 tsp salt.
Line a baking sheet with unbleached parchment paper. Using your hands, roll the dough into ~ 0.75-1” balls, and place on the pan in pairs, side-by-side, so they’re touching. The goal is for them to stick together. Repeat with remaining dough.
Use a fork to press down on each ball gently, then rotate 90 degrees to create a crosshatch pattern. Try to ensure that each pair stays stuck together.
Bake 10-12 minutes (check at 10), or until the edges are starting to turn golden brown.
While baking, make the filling. In a bowl, add the peanut butter and 1 T maple syrup. Add 1 T additional maple syrup if you want it sweeter.
Remove cookies from oven and LET COOL COMPLETELY (~10 min). If you skip this step, they will break and be hard to assemble.
Assemble. Once cooled, spread a small amount of filling on the inside of one cookie half, and place another half on top to create a sandwich. Repeat with remaining cookies.
